Here I am with a very requested recipe... I know, I know another recipe... But you'll thank me later =)
INGREDIENTS:
So to make my famous Lemon-Chocolate-y Muffins we will start by making our chocolate.
- 3 tbsp butter (softened)
- 1 cup confectioners sugar
- 3 tbsp cocoa powder (unsweetened)
- 2 to 3 tbsp half and half or whole milk or
evaporated milk whichever you have available
This actually makes more chocolate than you need to stuff 12 muffins, so you'll probably have some left over chocolate.
For the batter, you will need:
- 2 eggs
- 3/4 cup sugar
- pinch salt
- 1/2 cup vegetable oil
- 1/2 cup milk
- 1/2 lemon juice
- 1 lemon zest
- 1 1/2 to 2 cups flour depending on how soft or thick you like your muffins
- 1 tsp baking powder
DIRECTION:
To make the chocolate, stiff together the confectioners sugar and cocoa, set aside.
In a large bowl, cream butter until smooth, then gradually beat in sugar mixture alternately with milk.
Beat until light and fluffy. If n necessary, adjust consistency by adding more milk or sugar.
For the batter, beat the eggs, salt and sugar until creamy. Add milk, oil, lemon juice and zest; mix well.
Slowly add flour. Finally, mix in baking powder.
Crease your muffin tray. Pour about a teaspoon of batter then 1/2 a teaspoon of chocolate and finish by covering up the chocolate with more batter. Repeat for each muffin.
COOKING DIRECTION:
Preheat oven at 350F and cook for 30 min!
